I have to tell you that I’m a bit of a snacker come mid-afternoon. I can do really well during breakfast and lunch, and then around 2:30, I tend to start looking for the snacks. I’ve decided that I’m probably not going to quell my desire for snacks – instead what I need are some healthy, satisfying alternatives to the junk food. I’ve come up with these super delicious Pistachio & Apple Snacks that are a perfect solution to my mid-day snack attacks!
I really enjoy the crunch, slightly sweet and salty flavor of pistachios. Not only do they taste amazing, they’re really healthy – 1 oz of pistachios has about 3 grams of fiber. It’s also considered a “skinny nut” because they’re one of the lowest calorie, lowest fat nuts and offer more nuts per serving compared to most other snack nuts, and among the highest in protein. This means these are not only taste amazing, but will keep us fuller for longer!
To create my snacks, I’ve sliced an apple horizontally, and spread on low-fat cream cheese. I’ve then topped it with my shelled pistachios and then drizzled it with honey. If you like salty sweet snacks, you’ll LOVE this! The crunch of the apple and pistachios is fantastic, and the saltiness of the nut combined with the sweetness of the honey is perfection!
These Pistachio & Apple Snacks are really easy to make for a quick, mid-day snack and are fantastic with a cup of green tea. This satisfying snack will tide you over until dinner time and the salty-sweet combination is a fantastic alternative to those chips and candy!
