Monster Cookie Dough Bites

Cookie dough that is made to be eaten!  Adapted from my classic monster cookie recipe, these cookie dough bites are egg-free and is made to be eaten right out of the bowl, or rolled into balls for the perfect cookie dough snack.  No sneaking necessary!

This has been a very busy week!  On top of all of our regular family activities, I’ve been baking up a storm for a fundraising event for my son’s school.  I’ve been making my Fall Favorite Pumpkin Bread, Funfetti Sugar Cookie Bars, and a big pan of my Monster Cookie Bars.  I’ve made this recipe many times, and is a simple bar version of my Monster Cookie recipe.  These delicious bars are loaded with chocolate chips, M&M candies, peanut butter chips, and lots of peanut butter and oatmeal.  Suffice it to say, it makes for a really incredible cookie dough, which a few spoonfuls tend to make their way out of the bowl before it even gets to the pan.

Because its not usually a good idea to eat raw eggs (my Monster Cookie Bar recipe has 3 eggs!), and because this cookie dough is INCREDIBLE, I decided that I needed to make an egg-free, edible cookie dough version of this recipe!  It was really simple to adapt – I eliminated the eggs and substituted with honey, which makes for a nice binding.

Step 1: Mix the dough together

The dough comes together quickly and easily.  Start by creaming together the peanut butter and honey, then add in the oats, M&M’s, chocolate chips and peanut butter chips.  Combine together well.

Step 2: Refrigerate

Once the cookie dough is mixed together, I then refrigerated for an hour or so.  (Or you can just dive right in, and eat it straight out of the bowl!)  Refrigerating helps if you want to roll the dough into snack bites, as it helps the dough stiffen up a bit.

Step 3: Roll into snack-sized balls

I used a Tablespoon sized scoop to roll out these snack-sized balls, which make for the perfect sweet treat!  I placed a big sheet of waxed paper on the counter, and ended up with about 16 balls.  Once I rolled out these balls, which didn’t take long at all, I then placed in snack-sized bags and put in my freezer.  They’re great to take out for a decadent little snack when you’re in the mood!  It’s also helpful to have a smaller portion handy, versus eating the entire bowl of dough – which is a dangerous possibility when I’m around. 🙂

Here’s an easy shopping list for the ingredients you’ll need:

  • creamy peanut butter
  • honey
  • old fashioned oats (or you can use quick oats if that’s what you already have)
  • mini M&M’s (often found in the baking section near the chocolate chips)
  • mini chocolate chips
  • peanut butter chips

Ingredients

  • 2/3 c. creamy peanut butter
  • 4 Tbsp. honey
  • 1 1/2 c. old fashioned oats
  • 1/3 c. mini M&M's
  • 1 3 c. mini chocolate chips
  • 1/3 c. peanut butter chips

Instructions

  1. In a bowl, cream together the peanut butter and honey until well incorporated. Add the oats and stir. Next, add the M&M's, chocolate chips and peanut butter chips. Stir together to incorporate well. Refrigerate dough for 1 hour to chill.
  2. For rolling dough into balls: Scoop out dough with a cookie scoop or Tablespoon measuring spoon. Roll into balls with hands. Place into resealable bags or containers and refrigerate or freeze.
